100 grams sugar
10 grams salt
10 grams instant yeast
4 large eggs
200 milliliters whole milk
60 grams unsalted butter
500 milliliters vegetable oil (for frying)
300 grams pastry cream (for filling)
powdered sugar (for dusting)
Instructions
In a large bowl, combine flour, sugar, salt, and instant yeast.
Add eggs and milk, and mix until a dough forms.
Knead in the butter until smooth and elastic.
Cover the dough and let it rise for about 1 hour.
Punch down the dough and shape it into small balls.
Let the balls rise for another 30 minutes.
Heat oil in a deep fryer to 180°C (350°F).
Fry the dough balls until golden brown on all sides.
Remove and let drain on paper towels.
Once cool, fill each bombolone with pastry cream and dust with powdered sugar.
