A refreshing salad that perfectly balances the sweetness of charred corn, the creaminess of avocado, and the savory flavor of roasted red onions.

  • 4 ears corn, husked
  • 2 ripe avocados, diced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. Place the corn and sliced red onion on the grill. Grill the corn for about 10 minutes, turning occasionally, until charred. Grill the onion until softened and slightly caramelized.
  3. Remove from the grill and let cool slightly, then cut the kernels off the corn and chop the grilled onion.
  4. In a bowl, combine the corn, avocado, grilled onion, olive oil, salt, pepper, lime juice, and cilantro. Toss gently to combine.
  5. Serve immediately or refrigerate for up to 30 minutes before serving.
