- 8 ounces rice noodles
- 4 slices turkey bacon, chopped
- 1 chicken breast, sliced
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 cup bean sprouts
- 2 green onions, chopped
- 1 handful of peanuts, crushed
- Cook the rice noodles according to package instructions and set aside.
- In a pan, cook the turkey bacon until crispy. Remove and set aside.
- In the same pan, add the sliced chicken and cook until no longer pink.
- Pushing the chicken to one side, pour the beaten eggs into the pan and scramble.
- Add the cooked noodles, soy sauce, fish sauce, and lime juice into the pan. Mix well.
- Fold in the turkey bacon, bean sprouts, and green onions.
- Serve hot, topped with crushed peanuts.
