A delicious Chicken Pad Thai recipe with a twist of turkey bacon.

Ingredients

  • 8 ounces rice noodles
  • 4 slices turkey bacon, chopped
  • 1 chicken breast, sliced
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 cup bean sprouts
  • 2 green onions, chopped
  • 1 handful of peanuts, crushed

Instructions

  1. Cook the rice noodles according to package instructions and set aside.
  2. In a pan, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same pan, add the sliced chicken and cook until no longer pink.
  4. Pushing the chicken to one side, pour the beaten eggs into the pan and scramble.
  5. Add the cooked noodles, soy sauce, fish sauce, and lime juice into the pan. Mix well.
  6. Fold in the turkey bacon, bean sprouts, and green onions.
  7. Serve hot, topped with crushed peanuts.

Notes

  • Feel free to add more vegetables like bell peppers or carrots for added flavor.
  • For a vegetarian option, you can replace the chicken and bacon with tofu.
