8 ounces bittersweet chocolate, chopped
1/2 cup unsalted butter
3 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream
1 cup fresh raspberries
Instructions
Preheat the oven to 350°F (175°C).
Melt the chocolate and butter together in a double boiler.
In a separate bowl, whisk the eggs and sugar until thick and pale.
Fold the melted chocolate mixture into the egg mixture.
Stir in vanilla extract.
In another bowl, whip the heavy cream until soft peaks form, then fold into the chocolate mixture.
Gently fold in the raspberries.
Pour the mixture into a greased cake pan and bake for 25-30 minutes.
Let the cake cool before serving.
Notes
For a stronger raspberry flavor, you can add raspberry puree to the mousse.
