  • 2 cups mashed potatoes
  • 1 cup lentils, cooked
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup vegetable broth
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add onion, carrots, and celery; cook until softened.
  3. Add garlic and cook for another minute.
  4. Stir in the cooked lentils, peas, tomato paste, thyme, and rosemary.
  5. Add vegetable broth and let it simmer for 5 minutes.
  6. Spread the lentil mixture in a baking dish and top with mashed potatoes.
  7. Bake in the preheated oven for 25-30 minutes until the top is golden.
