  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, cook turkey bacon until crispy; remove and crumble.
  3. In the same skillet, add olive oil and sauté bell peppers, zucchini, and cherry tomatoes until tender.
  4. Add minced garlic and Italian seasoning; cook for another minute.
  5. Toss in the cooked pasta and crumbled turkey bacon; mix well.
  6. Season with salt and pepper; top with grated Parmesan cheese before serving.
