- 1/2 cup unsalted butter
- 1/4 cup corn syrup
- 1/2 teaspoon vanilla extract
- 3 cups rice cereal
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped nuts (optional)
- In a saucepan, combine sugar, butter, and corn syrup. Heat over medium heat, stirring until the mixture comes to a boil.
- Once boiling, let it cook for 2-3 minutes without stirring.
- Remove from heat and stir in vanilla.
- In a large bowl, combine rice cereal and nuts (if using). Pour the hot mixture over the cereal and stir to coat evenly.
- Press the mixture into a greased 9×13 inch pan.
- In another bowl, melt chocolate chips and pour over the cereal mixture, spreading evenly.
- Allow to cool completely before cutting into bars.
