1 cup sushi rice
1½ cups water
4 large nori sheets
100 grams prosciutto
100 grams salami
100 grams mozzarella cheese
1 cucumber, julienned
½ cup roasted red peppers, sliced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Instructions
Rinse the sushi rice under cold water until the water runs clear. Cook the rice in a pot with 1½ cups of water, bring to a boil, then simmer covered for 18 minutes.
Once the rice is cooked, let it cool for 10 minutes. Season with olive oil and balsamic vinegar.
Place a nori sheet on a bamboo sushi mat, spread a layer of rice leaving a small border at the top.
Add slices of prosciutto, salami, mozzarella, cucumber, and roasted red peppers on top of the rice.
Carefully roll the sushi tightly from the bottom up, using the mat to help shape it.
Seal the edge with a little water, then slice into bite-sized pieces.
Repeat with remaining ingredients.
Notes
For extra flavor, add fresh basil or arugula to the fillings.
