  • 3 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 4 large carrots, cut into chunks
  • 3 potatoes, quartered

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the chuck roast with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat and brown the meat on all sides.
  3. Add the chopped onion and minced garlic to the pot and sauté until translucent.
  4. Stir in the beef broth, red wine, tomato paste, oregano, thyme, and bay leaves. Bring to a simmer.
  5. Add the carrots and potatoes to the pot, cover it, and transfer to the preheated oven.
  6. Cook for 3 to 4 hours, until the meat is fork-tender.
  7. Remove from the oven, discard the bay leaves, and let the roast rest before slicing.

Notes
