- 3 pounds chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 bay leaves
- 4 large carrots, cut into chunks
- 3 potatoes, quartered
- Preheat the oven to 325°F (163°C).
- Season the chuck roast with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat and brown the meat on all sides.
- Add the chopped onion and minced garlic to the pot and sauté until translucent.
