- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 packs of ramen noodles
- 1 cup heavy cream
- 1 tablespoon garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup green onions, chopped
- 1/4 cup parmesan cheese, grated
- In a large pot, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add chicken breasts and cook until browned on both sides.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer until chicken is cooked through.
- Remove chicken from the pot and shred it. Return the shredded chicken to the pot.
- Add heavy cream and bring back to a simmer.
- In a separate pot, cook ramen noodles according to package directions. Drain and add to the soup.
- Stir in parmesan cheese and season with salt and black pepper.
- Garnish with green onions before serving.
Notes
- This recipe can also be made with leftover chicken.
- For a spicy kick, add red pepper flakes.
