- 500g chicken breast, diced
- 300g leeks, sliced
- 250ml chicken stock
- 150ml double cream
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 sheet of puff pastry
- 1 egg, beaten (for glazing)
- Preheat the oven to 200°C (180°C fan).
- In a large pan, sauté the onions and garlic until soft.
- Add the chicken and cook until browned.
- Stir in the leeks and thyme, then pour in the chicken stock and cream.
- Simmer until slightly thickened.
- Transfer the mixture to a pie dish and cover with the puff pastry.
- Brush with the beaten egg and cut slits in the pastry.
- Bake for 25-30 minutes until golden brown.
