A deliciously comforting chicken and leek pie recipe from Mary Berry.

Ingredients

  • 500g chicken breast, diced
  • 300g leeks, sliced
  • 250ml chicken stock
  • 150ml double cream
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 sheet of puff pastry
  • 1 egg, beaten (for glazing)

Instructions

  1. Preheat the oven to 200°C (180°C fan).
  2. In a large pan, sauté the onions and garlic until soft.
  3. Add the chicken and cook until browned.
  4. Stir in the leeks and thyme, then pour in the chicken stock and cream.
  5. Simmer until slightly thickened.
  6. Transfer the mixture to a pie dish and cover with the puff pastry.
  7. Brush with the beaten egg and cut slits in the pastry.
  8. Bake for 25-30 minutes until golden brown.

Notes

  • Serve with mashed potatoes for an extra comforting meal.
  • This pie can be made ahead and frozen before baking.
