  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 ounces cream cheese, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 tablespoon cinnamon
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In a separate bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Spoon the cream cheese mixture over the crusts in the pans.
  7. Sprinkle cinnamon over the top of each cheesecake.
  8. Bake for 20-25 minutes or until set.
  9. Let cool, then refrigerate for at least 2 hours.
