  • 4 pieces chicken thighs
  • 2 cups long grain rice
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup Nando’s peri-peri sauce
  • 4 cups chicken broth
  • 1 cup frozen peas

Instructions

  1. Season the chicken thighs with smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. In a large pot, heat some oil over medium-high heat and brown the chicken on all sides.
  3. Add the rice and peri-peri sauce, stirring to combine.
  4. Pour in the chicken broth, bring to a boil, then reduce heat and cover.
  5. Simmer for about 20 minutes or until the rice is cooked through.
  6. Add the frozen peas and cook for an additional 5 minutes.
  7. Remove from heat and let it rest for a few minutes before serving.

Notes

  • Adjust the spice level by choosing the hotness of the peri-peri sauce.
