  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (Gruyere or Swiss)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef roast until browned on all sides.
  3. Remove the roast and add onions to the pot, cooking until they are translucent.
  4. Add garlic and cook for an additional minute.
  5. Return the roast to the pot and add beef broth, Worcestershire sauce, thyme, salt, and pepper.
  6. Cover and roast in the oven for 3-4 hours, until the meat is tender.
