- 1 pound boneless chicken thighs
- 2 cups diced tomatoes
- 1 cup coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chopped spinach
- In a slow cooker, combine the chicken, diced tomatoes, coconut milk, onion, garlic, ginger, curry powder, turmeric, olive oil, salt, and black pepper.
- Stir well to combine all the ingredients.
- Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
- In the last 30 minutes of cooking, stir in the chopped spinach.
