  • 1 pound boneless chicken thighs
  • 2 cups diced tomatoes
  • 1 cup coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped spinach

Instructions

  1. In a slow cooker, combine the chicken, diced tomatoes, coconut milk, onion, garlic, ginger, curry powder, turmeric, olive oil, salt, and black pepper.
  2. Stir well to combine all the ingredients.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender.
  4. In the last 30 minutes of cooking, stir in the chopped spinach.
  5. Serve hot with rice or naan.

Notes

  • For an extra kick, add some diced chili peppers.
  • Can substitute chicken thighs with chicken breasts if preferred.
