- 2 pounds boneless, skinless chicken thighs
- 1 onion chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 tablespoon garam masala
- 1 teaspoon turmeric
- 1 tablespoon salt
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 lime, juiced
- Brown the chicken thighs in a skillet, then transfer to the slow cooker.
