A delicious slow cooker chicken curry that is both easy to make and packed with flavor.

  • 2 pounds boneless, skinless chicken thighs
  • 1 onion chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 tablespoon salt
  • 1 cup diced tomatoes
  • 1 cup chopped spinach
  • 1 lime, juiced

Instructions

  1. Brown the chicken thighs in a skillet, then transfer to the slow cooker.
  2. Add onion, garlic, and ginger to the slow cooker.
  3. Mix in coconut milk, curry powder, garam masala, turmeric, and salt.
  4. Add diced tomatoes and stir to combine.
  5. Cook on low for 6-8 hours or high for 4 hours.
  6. Stir in chopped spinach and lime juice before serving.
