8 ounces spaghetti
2 cups fresh spinach
1 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
Instructions
Cook the spaghetti according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Add the sun-dried tomatoes and cook for another 2 minutes.
Stir in the heavy cream and allow to simmer for 5 minutes.
Add spinach, grated Parmesan cheese, salt, and pepper, stirring until the spinach wilts.
