12 Medjool dates
1 cup ricotta cheese
1/4 cup honey
1/2 cup chopped pistachios
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C).
Carefully pit the dates and set them aside.
In a bowl, mix the ricotta cheese, honey, and vanilla extract until smooth.
Stuff each date with the ricotta mixture.
Top the stuffed dates with chopped pistachios.
Place the stuffed dates on a baking sheet and bake for 10 minutes.
Remove from the oven and drizzle with additional honey if desired. Serve warm.
