  • 4 cups chicken broth

  • 2 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped

  • 1/2 cup grated Parmesan cheese
  • 4 slices turkey bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the chicken broth over low heat.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  3. Add Arborio rice, stirring for a few minutes until lightly toasted.
  4. Gradually add chicken broth, one ladle at a time, stirring constantly until absorbed before adding more.
  5. Once rice is creamy and al dente, stir in sun-dried tomatoes, spinach, Parmesan cheese, and crumbled turkey bacon.
  6. Season with salt and pepper, then serve warm.
