  • 2 cups sweet potatoes, diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup salsa
  • 1 cup shredded cheese, optional

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sweet potatoes, black beans, corn, cumin, chili powder, and salsa.
  3. Layer the mixture in a casserole dish starting with sweet potatoes, then beans, corn, salsa, and top with cheese.
  4. Bake for 30-45 minutes until potatoes are tender.
  5. Let it cool for a few minutes before serving.
